My Mijo's Arroz

Summer vacation is coming to an end and Jacob, my youngest of three, has been bored for this past week. On Monday he actually asked to do more chores to pass the time! *winks* okay....well not quite. Poor baby has been without his buddy, (Joshua-baby #2). Josh has been at band camp all last week as well as for this week. Taking advantage of the time, I have been busy re-organizing my home office space.

So when Jacob, eager to do something, asked what he could do, I told him he could make dinner. It was an easy meal with very little ingredients to fool around with - pasta with a simple homemade sauce. Everyone enjoyed dinner and was surprised to learn that Jacob did it all by himself.

Yesterday, remembering his fab meal from last week, I invited my mijo to help me with dinner. We prepared carne con chile rojo, arroz, and frijoles. Jacob helped fry the rice.

Loving onion and garlic I tend to go overboard with the two when cooking. Baby's eyes were tearing and his sinuses were flaring! *rolls eyes* He is sooo sensitive. I tried showing him different ways he could hold the spoon from various distances from the pot. My methods were of no help to my little guy. Jacob had a different approach that worked best for him.

Que exajerado!!! Mijo always finds his own way to deal with life's little inconveniences. I chopped the darn thing (onion) and it was not soooo bad. *shrugs and pouts* Come on??!?? Goggles? Really? Goodness, he is too funny. Jacob's mind is always on science and he has a bounty of questions about how things work. The goggles were for the swimming lessons he took earlier this summer but, he has found many other uses for them. It helps him get in touch with his scientific mind.

By the way, the goggles solved his problem. He was able to finish cooking the rice for me too. It was delicious!
